Lacquered Almonds
A traditional Chinese garnish, these nuts are just the perfect addition to stir-frys, ginger ice cream, or simply nibbled with a glass of Chinese beer. Try this with walnuts instead of almonds.
Yield: 2 cups
- 2 cups water
- 1/2 cup honey
- 1 cup sugar
- 1 teaspoon kosher salt
- 2 cups Zenobia Supreme Almonds
Place the water, honey, sugar and salt in a medium size pot and bring to a boil over high heat and cook until the sugar has dissolved. Lower the heat to medium and cook for 15 minutes.
Preheat the oven to 200 degrees. Line a baking sheet with parchment paper.
Drain the nuts and discard the syrup. Pour the nuts to the prepared baking sheet and arrange in a single layer. Transfer to the oven and cook until dry and glossy, about 1 - 1 1/2 hours. Immediately loosen the nuts with a spatula and set aside to cool.
