Cinnamon Sugar Almonds
These slightly spicy, sweet almonds are delicate, rich and reminiscent of cinnamon sugar toast, a favorite treat of childhood.
Yield: 4 cups
- 1 large egg white (about 2 tablespoons), at room temperature
- 1 teaspoon cold water
- 1/4 cup sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 4 cups Zenobia Supreme Almonds
Preheat the oven to 250 degrees. Line a baking sheet with parchment paper.
Place the egg white in a large stainless steel bowl and whisk until frothy. Whisk in the water. Add the sugar, cinnamon and salt and whisk again. Add the almonds and stir until well coated. Pour the mixture onto the prepared pan and arrange in a single layer. Set aside at least 30 minutes and up to two hours. Transfer to the oven and bake, stirring occasionally, for 1 hour. Immediately loosen the nuts with a spatula and set aside to cool.
