Caramelized Honey Pistachio Nuts
Shiny and sweet, these can be made with an assortment of gourmet nuts, including Virginia peanuts, pecans, almonds, cashews and walnuts, in combination or alone. These nuts are so simple to make and can be used as a before-dinner snack but are also excellent following dinner accompanied by a rich soft cheese and sliced fruit, such as crisp pears or apples.
Yield: 2 cups
Turkish Pistachios Gold Series
- 4 cups Zenobia Turkish or California Pistachios
- 1/4 cup sugar
- 1/4 cup water
- 1 tablespoon honey
Preheat the oven to 300 degrees. Line a baking sheet with parchment paper.
Remove and discard the shells from the pistachios. Set the meats aside.
Place all the ingredients in a large skillet and cook over medium heat until the sugar just begins to caramelize and the liquid has almost been absorbed, about 2- 3 minutes. Pour the mixture onto the prepared sheet and arrange in a single layer. Transfer to the oven and bake until golden brown, about 10-12 minutes. Immediately loosen the nuts with a spatula and set aside to cool.
