Spinach with Garlic and Dry Roasted Macadamias

Easy and quick.

Serves 4 

Dry Roasted Macadamias Gold Series

  • 1 1/2 - 2 pounds fresh spinach, ends trimmed and discarded
  • 2 - 4 garlic cloves, chopped
  • 2 teaspoons olive oil
  • 2 tablespoons Zenobia Dry Roasted Macadamias

 Wash the spinach well and shake out the water. Place a large saucepan over high heat and, when it is hot, add the spinach. Cook, stirring occasionally, until tender, about 5-7 minutes. Transfer to a colander and set aside.

Place the macadamias on a cutting board and coarsely chop.

Place the same saucepan over medium heat and, when it is hot, add the olive oil. Add the macadamias and garlic and cook until golden, about 3-5 minutes. Return the spinach to the saucepan, toss to combine and cook until heated through, about 2 minutes. Add salt and pepper to taste.
